Doghmous honey: what it is and how to enjoy it
A rare Moroccan honey from the euphorbia of the Atlas: origin, taste and uses.
Doghmous is the Moroccan name of Euphorbia resinifera, a plant that only grows in the Atlas. Its honey is one of the most famous in the country.
Where it comes from
The plant grows on dry, rocky slopes around Béni Mellal, Azilal and the Tadla. It flowers at the end of summer.
Taste
Dark, strong, with a peppery feeling in the throat that surprises the first time.
How people enjoy it
By the spoon in winter, in warm water with lemon, or with amlou. Always avoid boiling water, which spoils the aromas.
