In spring, the high slopes of the Atlas turn purple with wild thyme. Our bees forage there for a few weeks and bring back a honey that smells like the mountain itself.
Taste
Amber colour, medium texture, a powerful herbal aroma and a slightly warming finish. It crystallises slowly into a fine, smooth cream.
Why it is special
Thyme grows wild at altitude, far from crops and roads. The honey is extracted and potted raw, in small batches.
